Last week, I noticed the painted labels peeling off the bottom of my mixing bowls. I stained a spatula a pretty pink, and I bent back a fork’s handle while cutting butter into flour and sugar. Yes, you’ve probably guessed it… I’ve been baking too much!
Unfortunately, I can’t share most of it with you. Not yet, anyway. You see, after I published my first cookbook, I immediately dove headfirst into a new one—and it’s entirely devoted to baking!
So I’ve spent that past few weeks becoming best friends with my mixing bowls and measuring spoons, spilling flour and sugar across the countertop, and chowing down on countless cookies and fruit crumbles. It’s a tough job… But somebody’s gotta do it!
With so much taste testing going on, I tend to nibble on little snacks throughout the day instead of sitting down to full-fledged meals. Usually I reach for carrots, grapes, or a banana, but if I’ve been sampling too many fruit pies or cobblers, I need to get my chocolate fix! (Yes, I’m a chocoholic. See here for details.)
Although incredibly tempted to break off just one tiny piece of my favorite Trader Joe’s dark chocolate bar—or sneak another one of these—I tossed together something better: a Chocolate Lover’s Healthy Snack Mix! With fruit, fiber, and a bit of healthy fat from almonds, a bowl of this is sure to leave you satisfied—especially that little chocoholic inside all of us!
