I’m thrilled to introduce Karey, the author of “Nutty About Health”. She began blogging about food and fitness over a year ago, while still working and going back to school for a degree in Dietetics. Add in spending time with her dog, cat, and husband on top of that, and I’m amazed by how she stays sane and so sweet all the time!
Because Karey wants to stay healthy and still satisfy her inner “Sugar Monster,” she has developed quite a few tasty recipes that I’m itching to try. After drooling over her PB Dream Pancakes, Healthy Peanut Butter Blossoms, and Dark Chocolate PB and Banana French Toast (and realizing I really needed to crack open my own jar of peanut butter), I finally asked if she would share her decadent chocolate flax pancakes with you.

I have a delicious gluten & grain-free pancake recipe to share with you all today. Plus, it uses flaxseed meal, so it’s packed with ALA’s…. if you’re not familiar with ALA’s, they’re an essential fatty acid that can be converted in the body to EPA & DHA, which is vital for body health. Oh, & did I mention that these pancakes are chocolate?! Just wanted to make sure. ;-)
These pancakes are made with flaxseed meal, making them gluten-free, full of fiber, & low-carb/keto diet friendly (if you leave off all the extra fruit). This recipe is very similar to my other flax pancake recipes, but this one is chocolate! Who doesn’t like to get their chocolate fix on?
