Shortly after my guy and I started dating, I quickly realized that he rarely ate leftovers. In fact, he usually ignores them—except for spicy turkey chili, which acquires more heat the longer it sits. Because I refused to be stuck with 5 straight nights of spaghetti or stew, I immediately started scaling back recipes to create just 2-3 servings instead. (I didn’t mind repeating a meal two nights in a row… But an entire week would be overkill!)  

 

Eventually, I recognized we weren’t the only couple struggling to find recipes for a smaller household, so I decided to write a cookbook where every recipe—breakfasts, entrées, and desserts—produced exactly 2 portions. You’ll never have unwanted leftovers, and each recipe easily scales up to feed a larger crowd!

        Usually I like to throw tons of leftovers in my salads!! I call it the “everything salad”! It’s really easy to enjoy with things like pasta or veggies!

    This would be the perfect book for my boyfriend and I. I’m trying to get him to eat healthier (slowly but surely…haha) and I’d say within 3 1/2 years of being with him he has greatly improved! Can’t wait to cook more meals with him.

        Oh, Amy, I understand! I have the PICKIEST eater ever for a boyfriend. Quite unfortunate sometimes because I love so many types of food, haha. But I think I’ve really gotten him to change his diet and try new things because he’s focused on his health now and knows how important your diet is to improving your overall health, energy, and happiness. :)
