Last month on the day before my birthday, my mom spent the entire morning and afternoon helping me with chores around the house: washing dishes, cleaning bathrooms, and even building a bookshelf for all of my food photography props. My mom is superwoman!
I offered to treat her to ice cream (one of her favorite desserts!) as a thank you, so towards the end of the afternoon, we drove to Baskin-Robbins about a mile away. Although Mom almost always picks mint chocolate chip, she decided to look at all of the other flavors before placing her order…
But when she spotted the container of Mississippi Mud, a combination of chocolate ice cream and chocolate fudge ice cream with brownie chunks and a chocolate fudge swirl, and I reported that it tasted incredible… She quickly changed her mind, and I even splurged for a chocolate-dipped cone for her. My mom is a true chocoholic—and she loved every last bite!
Since ice cream parlor scoops can be expensive, I didn’t exactly want to stop by Baskin-Robbins every day… Even though its extremely close location was oh so tempting! Instead, I whipped up this yummy The Ultimate Healthy Chocolate Ice Cream for myself at home!
It tastes just as rich and chocolaty as the ice cream I bought my mom, but it has no heavy cream or sugar… And only 85 calories! Even better? It’s supremely easy to make! Just watch my video below to learn how I make it, then grab the recipe directly beneath the video!
