A few weeks ago, my mom’s coworker offered her a pair of tickets to see the Golden State Warriors play the San Antonio Spurs in Game 2 of the NBA Playoffs. Since Mom had never attended a professional basketball game before, only high school and college ones, she immediately said yes.
That Tuesday afternoon, we took the train to the arena, and we snapped plenty of pictures before walking in: the live TV set-up for the broadcasters just outside the gates, the entrance with photos of Steph Curry and Klay Thompson and Kevin Durant posted above, and the two of us looking overly excited and giddy.
Once inside the arena, we found our seats, and after pulling the free bright yellow Warriors t-shirts off of them, we watched the players warming up on the court. Because they worse similar shirts to the ones lying on our seats, which lacked numbers on the back like their game jerseys, I quietly pointed out each player to Mom, whispering their names as they effortlessly shot the ball in the hoop. Although she likes them, she watches sports less frequently than Dad or me!
For the next few hours, we cheered along with the sellout crowd as the Warriors immediately took the lead, making the score more lopsided with nearly every possession. As a blowout with an almost 40-point difference when the final buzzer rang, we thoroughly enjoyed the game and Warriors’ win!
Although we arrived home sooner than I expected, we still went to bed later than usual… Which was why I made these Healthy Peach Pie Buttermilk Pancake Bites for our breakfast the following morning! They taste just like pancakes you cook on the stove, but they don’t require the careful attention and long hours of flipping like traditional pancakes. Plus they contain no refined flour or sugar and only 29 calories!
Mom and I thought the bright fruit bits looked especially festive after watching the {orange} basketball soar through the hoops the night before, too! ??
You’ll need a few key ingredients for this easy, kid-friendly recipe! Starting with white whole wheat flour. Yes, white whole wheat flour actually exists! It’s made by finely grinding a special type of soft white wheat, which has the same health benefits as red wheat (the source of regular whole wheat flour!) but a lighter taste and texture. This makes it perfect for baked treats—and pancakes too!
You’ll also need low-fat buttermilk. I’m sure you already guessed that! Because I rarely finish off a full carton before it spoils, I actually prefer this powdered buttermilk. It tastes and behaves just like the regular kind you buy in the supermarket’s refrigerated section, but it’s shelf-stable and lasts for months. I highly recommend it!
For the irresistible peach pie flavor, you’ll mix in finely diced peaches and a hint of cinnamon. My grandma always used cinnamon in her famous peach pie, so I add it to all of my peach treats, too! As for the peaches, make sure you cut them to be about the same size as miniature chocolate chips to ensure these pancake bites bake evenly. It takes a little extra time and effort, but I promise they’re worth it!
With summer just around the corner {hooray!!} and school basically over, it might not matter quite as much at this exact moment but… These pancake bites are perfect for make-ahead breakfasts, and they freeze really well too! And I know I actually would’ve looked forward to waking up on school-day mornings if these appeared on my plate!

Healthy Peach Pie Buttermilk Pancake Bites | | Print |
- 1 cup + 2 tbsp (135g) white whole wheat flour or gluten-free* flour (measured like this)
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ tbsp (7g) unsalted butter or coconut oil, melted
- 1 large egg white, room temperature
- 1 ½ tsp vanilla extract
- ½ cup (120mL) low-fat buttermilk, room temperature
- ¼ cup (60g) plain nonfat Greek yogurt
- ¾ cup (105g) finely diced peaches
- Preheat the oven to 350°F, and coat 24 mini muffin cups with nonstick cooking spray.
- In a small bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate bowl, whisk together the butter or coconut oil, egg white, and vanilla. Stir in the buttermilk. Stir in the Greek yogurt, mixing until no large lumps remain. Gently fold in the diced peaches.
- Divide the batter evenly between the prepared mini muffin cups. Bake at 350°F for 14-17 minutes or until the tops feel firm to the touch and a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes before carefully transferring to a wire rack.
Whole wheat pastry flour, regular whole wheat flour, or all-purpose flour may be substituted for the white whole wheat flour.
I highly recommend this powdered buttermilk! It’s inexpensive, shelf-stable, and will keep for ages if stored in the refrigerator. It has the same iconic flavor as fresh buttermilk and behaves exactly the same in recipes. Alternatively, mix together ½ cup (120mL) of any milk (dairy or non-dairy) and 1 teaspoon fresh lemon juice or vinegar. Let that sit for 5-10 minutes before using in this recipe.
Both fresh peaches and canned peaches in 100% juice that have been thoroughly drained will work. Cut them to be about the same size as miniature chocolate chips to ensure the pancake bites bake evenly.
To cook these on the stove like traditional pancakes, follow these instructions of mine! (This pancake batter is supposed to be thick, similar to muffin batter, because thicker batter yields thicker and fluffier pancakes!)

Just curious.. can you makes these as regular sized muffins? If so, how long should they bake for?
Yes, that should work! I’m not entirely sure how long they’ll require to bake, but start checking after about 16 minutes. They may take longer, but it’s easier to bake them longer than it is to save muffins that have been baked for too long! 😉 They’ll be done when the tops feel firm to the touch and a toothpick inserted into the center comes out clean or with a few crumbs attached. I can’t wait to hear what you think of them Tricia!
