This easy granola is great for breakfasts, snacks, or yogurt parfaits! It’ll stay crunchy for at least one week if stored in an airtight container.
1 ½ cups (150g) old-fashioned oats (gluten-free if necessary)
2 cups (60g) crisp brown rice cereal
2 large egg whites, room temperature
¼ cup (60mL) honey
1 Nature Valley Roasted Peanut and Honey Simple Nut Bar, finely chopped
Preheat the oven to 350°F, and coat a 9”-square pan with nonstick cooking spray.
In a medium bowl, stir together the oats and rice cereal. In a separate bowl, whisk together the egg whites and honey. Pour the honey mixture over the cereal mixture, stirring with a spatula until all of the cereal is coated.
Transfer the cereal mixture to the prepared pan. Bake at 350°F for 40-45 minutes, very gently stirring every 15 minutes, or until the granola is crunchy. Cool completely to room temperature in the pan before sprinkling the chopped nuts on top.
Notes: Be very gentle when stirring to avoid breaking up the clusters too much! It’s important to stir to ensure that the granola closest to the edges of the pan doesn’t burn.
