10 Minute Cranberry Jam
Yields: about 10 tablespoons
 
This homemade jam is so easy to make! It’s the perfect combination of sweet and tart flavors, and it makes for wonderful gifts during the holiday season. This recipe is easily doubled or tripled to make more. The jam will last for at least 1 to 2 weeks if stored in an airtight container in the refrigerator.
  1. Add the cranberries and water to a food processor or blender, and pulse until smooth. Transfer the mixture to a small saucepan, and add the chia seeds and stevia. Cook over medium-high heat, stirring constantly, for 3-5 minutes or until the amount of liquid has reduced by half. Transfer the jam to a glass jar with a tight fitting lid, and let it cool to room temperature before covering and refrigerating.
Notes: Frozen and thawed cranberries may be substituted for the fresh cranberries.

This is the vanilla crème stevia that I use. If using a different sweetener, you’ll need the equivalent of 6 tablespoons of sugar.
