Skinny Broccoli & Cheddar Turkey Quiche
Yields: 1 quiche, 8 slices
This quiche is super simple to whip up, and it’s perfect for quick breakfasts or dinners. Even better, all of the protein will keep you full for hours! It tastes wonderful both warm and cold, and it’ll keep for at least a week if stored in an airtight container in the refrigerator.
  • ¾ cup (50g) finely chopped organic broccoli florets
  • 1 ½ tsp Herbs de Provence, divided
  • ¼ tsp salt, divided
  • 4 oz (113g) Foster Farms Organic Ground Turkey*
  • ¼ cup (28g) finely grated reduced fat cheddar cheese
  • 1 ¾ cups (420mL) egg whites (from a carton)
  1. Preheat the oven to 325°F, and coat a 9”-round pan with nonstick cooking spray.
  2. Lightly coat a large skillet with nonstick cooking spray. Briefly preheat over medium heat. Add the broccoli, and sprinkle with ½ teaspoon of Herbs de Provence and half the salt. Cook, stirring frequently, for 3-4 minutes or until bright green and tender. Remove from the pan.
  3. Lightly re-coat the pan with nonstick cooking spray, and add the ground turkey. Cook over medium heat for 2 minutes, stirring occasionally to break up the turkey. Sprinkle with the remaining Herbs de Provence and salt. Continue to cook for 1-2 more minutes, or until the turkey is completely cooked through and beginning to brown. Break up any large clumps.
  4. Evenly sprinkle the broccoli, turkey, and cheese into the prepared baking pan. Carefully pour the egg whites over the top. Bake at 325°F for 25-35 minutes or until the eggs have fully set. Cool in the pan for at least 5 minutes before slicing and serving.
Notes: Regular, non-organic broccoli florets are fine.

Herbs de Provence is a mixture of oregano, rosemary, thyme, savory, marjoram, and sometimes a few other herbs. This is the mixture that I used. Other herbs or seasonings may be substituted.

I often use Foster Farms Fresh & Natural Extra Lean Ground Turkey as well. Either option will work.

I highly recommend freshly grating your own cheese! It has a better taste and texture.

I prefer the ease of egg whites from a carton. (Plus you won’t be wasting any yolks!) If you prefer, substitute 9-10 well-beaten large egg whites instead.
