These pudding parfaits are so easy to make, yet they look very impressive! They're best if served immediately after assembling. However, the peanut butter pudding can be made up to 3 days in advance; simply store in an airtight container in the refrigerator until ready to assemble.

Instructions
To prepare the pudding, beat together the yogurt, instant pudding mix, Truvia, and peanut butter in a medium bowl using a hand-held mixer for 2 minutes, or until thickened. Chill for at least 2 hours. (If chilling longer, cover the top of the bowl with foil.)
To assemble the parfaits, transfer the peanut butter pudding into a zip-topped bag, and cut off a piece of one corner. Pipe a layer of the pudding into 2-ounce serving glasses. Sprinkle the crushed graham crackers and diced peanut butter cups on top; then add another layer of pudding. Garnish with graham cracker crumbs and a few more diced peanut butter cups.

GREEK YOGURT NOTE: For the best results, I recommend Fage (this one!). It's thicker than some other brands, so it yields the best pudding texture.TRUVIA NOTE: Almost any sweetener will work in place of the Truvia! For the best results, I recommend granulated-style sweeteners OR concentrated liquid stevia (this is my favorite!). Liquid sweeteners like honey, pure maple syrup, or agave can make your pudding runny and prevent it from setting properly.PEANUT BUTTER NOTE: Any creamy peanut butter should work! Homemade (like my 5-minute homemade peanut butter!), the natural drippy-style kind, Skippy, JIF, etc. Just use whatever creamy peanut butter you normally keep on hand!CHOCOLATE GRAHAM CRACKER ALTERNATIVES: If you don’t have chocolate graham crackers, substitute chocolate Teddy Grahams or Oreo cookies (with the cream centers removed).GLUTEN-FREE OPTION: For a gluten-free version, use gluten-free chocolate sandwich cookies with the cream centers removed, such as these.{gluten-free, low fat, low calorie, higher protein}
