These protein-packed energy bites taste like a cross between oatmeal cookies and fudgy brownies. They’re so chocolaty and rich! Store any leftovers in an airtight container on the counter for up to 4 days.
2cupsfrozen unsweetened blueberries, thawed and drained
2-4tbsp (30-60mL)water
Instructions
Add the oats, protein powder, and cocoa powder to a large bowl, and stir until thoroughly combined.
Add the blueberries to a food processor, and pulse until smooth. Add the blueberry purée to the oat mixture, and stir until incorporated. If the mixture looks dry, add a few teaspoons of water at a time until everything sticks together. (Note: If the mixture is too wet to shape, refrigerate for at least 1 hour, or until firm.) Roll the mixture into 30 small balls.
Notes
OTHER OAT OPTIONS: Instant oats (also called "quick cooking" or "one minute" oats – and gluten free, if necessary!) may be substituted for the old-fashioned rolled oats. I prefer instant oats because they’re smaller and hold together the mixture slightly better. Do not substitute steel-cut oats.IMPORTANT PROTEIN POWDER NOTES: This recipe was specifically designed for the plant-based protein powder listed in the Ingredients list. I buy it here. Most protein powders behave differently, especially when it comes to absorbing moisture.
