Dark Chocolate Strawberry Energy Bites
Yields: 30 energy bites
 
These protein-packed energy bites taste like fudgy spheres of pure dark chocolate! They’ll last for at least 5 days if stored in an airtight container in the refrigerator.
  1. In a large bowl, mix together the protein powder, cocoa powder, and oats.
  2. Purée the strawberries until completely smooth. Add the purée to the cocoa mixture, and stir until all of the dry ingredients have been incorporated. (If necessary, stir in 1 teaspoon of water at a time if the mixture is too dry to hold together.) Shape into 30 small balls. Place in an airtight container, and refrigerate until ready to eat.

IMPORTANT PROTEIN POWDER NOTES – READ BEFORE BEGINNING: This recipe was specifically designed for PlantFusion vanilla bean protein powder. I buy it here. Many protein powders behave differently, especially when it comes to absorbing moisture. If you substitute a different plant-based protein powder, you may need to add more protein powder if the dough is too wet -OR- more water if the dough is too dry.

Do NOT substitute whey-based protein powder. The mixture will be too sticky to roll into balls and won't set properly.

IMPORTANT FLAVOR NOTES – READ BEFORE BEGINNING: The strawberries merely act as the “glue” to hold together the dry ingredients. You can’t really taste them.

These are meant to taste very dark, similar to 72% dark chocolate. If you prefer a sweeter taste, add your preferred granulated (or solid) sweetener to taste.

OAT ALTERNATIVES: Instant oats (gluten-free, if necessary) may be substituted for the old-fashioned rolled oats. Instant oats are also called "quick-cooking" or "one-minute" oats. Do not substitute steel-cut oats.

EGG-FREE, DAIRY-FREE + VEGAN OPTION: No modifications necessary!

GLUTEN-FREE OPTION: Use certified gluten-free old-fashioned rolled oats or certified gluten-free instant oats.

HOW TO STORE: Store these energy bites in an airtight container in the refrigerator. They should keep for at least 5 days.
