Notes: Instant oats (also called “quick-cooking” or “one-minute” oats) or
gluten-free instant oats may be substituted for the old-fashioned oats. I haven’t tried steel-cut oats and don’t know whether they’ll work.
You’ll want to use a food processor or blender with very sharp blades and a strong motor. This ensures that the oat flour turns out as fine as possible without overworking your machine.
