This low-calorie frappuccino tastes like the popular ice cream flavor! The recipe yields a lot—about 16 oz—so make sure you have a tall glass for serving.
sweetener, to taste(such as stevia, monk fruit, etc - see Notes!)
½tspminiature chocolate chips or dark chocolate(finely chopped)
Instructions
Add coffee, milk, cocoa powder, and peppermint extract to a blender. Pulse until well combined, scraping down the sides as necessary. Add the ice and sweetener (if using). Blend until smooth and no large ice chunks remain. Pour into a glass, sprinkle with the chopped chocolate, and serve immediately.
Notes
DOUBLE STRENGTH COFFEE: To prepare the double-strength coffee, use twice the normal amount of coffee grounds to prepare your coffee (for many brands, that would be 4 tablespoons of grounds, instead of 2 tablespoons, per ¾ cup water). Alternatively, use 2 teaspoons of instant coffee crystals mixed with ¾ cup water.MILK ALTERNATIVES: Any milk may be substituted for the nonfat milk.COCOA POWDER NOTE: I prefer regular unsweetened cocoa powder (like this!) rather than Dutched cocoa powder or special dark cocoa powder because it has a much stronger chocolate flavor in this frappuccino.PEPPERMINT EXTRACT NOTE: If you're not a mint fan, you can easily omit the extract to make a plain mocha frappuccino instead!SWEETENER NOTES: I typically use anywhere from 8-16 drops of this liquid stevia, depending on how big of a sweet tooth I'm having! However, you can easily use your favorite sweetener, whether that's stevia, monk fruit, erythritol, coconut sugar, honey, or anything else. I generally recommend starting with your sweetener's equivalent of 2 teaspoons of granulated sugar and adjusting to taste.DAIRY FREE + VEGAN OPTION: For a vegan version, substitute your favorite non-dairy milk (soy, almond, coconut, etc).SEPARATION TIP: To help prevent the frappuccino from separating, add ⅛ teaspoon of xanthan gum along with the ice.{gluten free, dairy free, egg free, vegan, clean eating, low fat}
