This quiche is super simple to whip up, and it’s perfect for quick breakfasts or dinners. Even better, all of the protein will keep you full for hours! It tastes wonderful both warm and cold, and it’ll keep for at least a week if stored in an airtight container in the refrigerator.
1 ¾cups (420mL)egg whites(from a carton – and see Notes!)
Instructions
Preheat the oven to 325°F, and coat a 9”-round pan with nonstick cooking spray.
Lightly coat a large skillet with nonstick cooking spray. Briefly preheat over medium heat. Add the broccoli, and sprinkle with ½ teaspoon of Herbs de Provence and half the salt. Cook, stirring frequently, for 3-4 minutes or until bright green and tender. Remove from the pan.
Lightly re-coat the pan with nonstick cooking spray, and add the ground turkey. Cook over medium heat for 2 minutes, stirring occasionally to break up the turkey. Sprinkle with the remaining Herbs de Provence and salt. Continue to cook for 1-2 more minutes, or until the turkey is completely cooked through and beginning to brown. Break up any large clumps.
Evenly sprinkle the broccoli, turkey, and cheese into the prepared baking pan. Carefully pour the egg whites over the top. Bake at 325°F for 25-35 minutes or until the eggs have fully set. Cool in the pan for at least 5 minutes before slicing and serving.

BROCCOLI ALTERNATIVE: Non-organic broccoli florets may be substituted.HERBS DE PROVENCE NOTE + ALTERNATIVE: Herbs de Provence is a mixture of dried herbs often used in Provençal recipes. You can find it near the other herbs at many grocery stores. Some spice brands include additional dried herbs, but staples in herbs de Provence are basil, thyme, rosemary, marjoram, savory, and lavender.I used this blend, which included all of the herbs above, plus sage.If you can’t find herbs de Provence, then you’re welcome to use a different blend of herbs or make your own custom herbs de Provence blend instead.TURKEY ALTERNATIVES: I often use Foster Farms Fresh & Natural Extra Lean Ground Turkey, and it works just as well. Ground chicken may also be substituted.You can also use leftover cooked turkey (from Thanksgiving, for example!). In Step 2, dice or shred your cooked turkey, and just toss it in a bowl with the herbs de Provence (no need to cook it again!).CHEESE NOTE + ALTERNATIVES: I highly recommend freshly grating your own cheese! It has a better taste and texture.Regular cheddar (not reduced fat) will also work. I prefer sharp or extra sharp cheddar, but any type will work (medium, white, etc).Other cheeses that melt well, such as mozzarella, provolone, Monterey Jack, and others, may also be substituted for the cheddar (either the reduced fat or regular version).EGG WHITES NOTE: I prefer the ease of egg whites from a carton. (Plus you won’t be wasting any yolks!) If you'd rather use fresh, substitute 14 well-beaten large egg whites instead.
