I’m sharing today’s recipe in collaboration with Foster Farms. Their Foster Farms Organic Ground Turkey adds lots of lean, wholesome protein to this delicious quiche. I’m a huge fan of all their products!
For a few years during my childhood, my dad and I developed and stuck with a special Sunday morning ritual almost every week. After returning home from church and changing out of our nicer attire into jeans and sweatshirts, we gathered in the kitchen to cook brunch for our family. (Well, minus my younger brother… He mainly ate cold cereal and frozen waffles during that time!)
Dad put me in charge of whisking eggs, grating a big pile of extra sharp cheddar cheese, and popping slices of whole wheat bread into the toaster oven. While I worked, he cooked the bacon, delicately flipping each strip in the pan to avoid grease splattering everywhere, until it turned perfectly crispy.
After he crumbled half of the bacon, I handed over the first bowl of frothy whisked eggs, and he poured them into another small pan on the stove. He stood watch with a spatula in hand, and when the eggs looked mostly set, he evenly sprinkled a generous amount of cheese and bacon over half the pan, carefully folded the other half of eggs on top, and slid the omelette onto a plate. I added a slice of toast before dashing into the family room to inform Mom that her brunch was ready.
As Mom ate, Dad and I repeated the process twice more, once for my meal and another time for his. When we all finished, Mom offered to wash the dishes, which Dad and I readily accepted.
Although we haven’t cooked omelettes together in years, I still think of my dad every time I make myself one or see them offered on a restaurant menu. So many fond memories from childhood!
While Dad has been thoroughly enjoying my overnight oats recipes over the past few months, I thought he might enjoy a new easy, protein-packed breakfast that he could eat warm, especially with the weather starting to cool off. Knowing how much we both love egg dishes (if those omelettes were any indication!), I created this Healthy Broccoli & Cheddar Turkey Quiche in honor of him. It’s much healthier than the bacon-loaded brunches of our past, but it’s still just as easy to whip up and full of fresh, wholesome ingredients!
Like I mentioned, this quiche is super simple to make. You just need 4 ingredients, plus seasonings! To start, you’ll cook finely chopped fresh broccoli until it’s bright green and tender. It’s important to cut the broccoli florets into very small pieces, about the size of blueberries, so that the quiche bakes evenly and easily cuts into wedges. For an irresistible savory flavor, my dad almost always turns to his favorite Herbs de Provence to season veggies, so I sprinkled some onto the broccoli as it cooked. It made my kitchen smell fantastic!
After removing the broccoli, you’ll add some ground turkey to the pan. My dad and I love the ground turkey from Foster Farms, and we recently discovered their Foster Farms Organic Ground Turkey. It comes from right here in California where we live, and the turkeys are raised free-range on organic land, antibiotic-free, and fed a completely organic diet. We love supporting such great local products! (And they also offer organic whole turkeys too, which I already have my eye on for Thanksgiving!)
Now it’s time to assemble! I prefer to layer the “mix-ins” in the baking pan first because this ensures that each slice contains a {mostly} equal amount of each goodie. First the turkey… (Minus a few nibbles for taste testing, of course!) Then the broccoli… Then the finely grated cheddar… And finally, carefully pour the egg whites on top. All that’s left to do is pop the pan in the oven to bake!
How’s that for a super easy, delicious, protein-packed meal? And when you make your own, remember to snap a picture and share it on Instagram using #amyshealthybaking and tagging @amyshealthybaking IN the photo itself! (That guarantees I’ll see your picture! 🙂 ) I’d love to see your healthy broccoli and cheddar turkey quiche!
Healthy Broccoli & Cheddar Turkey Quiche
Ingredients
- ¾ cup (50g) finely chopped organic broccoli florets
- 1 ½ tsp herbs de Provence (divided)
- ¼ tsp salt (divided)
- 4 oz (113g) Foster Farms Organic Ground Turkey*
- ¼ cup (28g) finely grated reduced fat cheddar cheese (see Notes!)
- 1 ¾ cups (420mL) egg whites (from a carton – and see Notes!)
Instructions
- Preheat the oven to 325°F, and coat a 9”-round pan with nonstick cooking spray.
- Lightly coat a large skillet with nonstick cooking spray. Briefly preheat over medium heat. Add the broccoli, and sprinkle with ½ teaspoon of Herbs de Provence and half the salt. Cook, stirring frequently, for 3-4 minutes or until bright green and tender. Remove from the pan.
- Lightly re-coat the pan with nonstick cooking spray, and add the ground turkey. Cook over medium heat for 2 minutes, stirring occasionally to break up the turkey. Sprinkle with the remaining Herbs de Provence and salt. Continue to cook for 1-2 more minutes, or until the turkey is completely cooked through and beginning to brown. Break up any large clumps.
- Evenly sprinkle the broccoli, turkey, and cheese into the prepared baking pan. Carefully pour the egg whites over the top. Bake at 325°F for 25-35 minutes or until the eggs have fully set. Cool in the pan for at least 5 minutes before slicing and serving.

Oooooo quiche, it’s been so long! 😉 I’m a HUGE fan of savory breakfasts when I go out for them or on weekends, and I especially love that this quiche is crustless….and has cheddar cheese. 😉 This could work in a 9×9 square pan too right?
After seeing all of your brunch pictures on Instagram, I had a feeling you might like this Marina! 😉 It’d work in an 8″-square pan instead of a 9″-round. (The math works out so that the 9″-square would be too big.) I’d love to hear what you think if you try it!
Amy-Do you suppose I could substitute fresh spinach instead of broccoli?
Thank you
Valerie
I really appreciate your interest in my recipe Valerie! You can substitute spinach for the broccoli, but I recommend sautéing it first, just like with the broccoli. 🙂 I can’t wait to hear what you think of this quiche!
Amy, I know there are many many blogs out there but I simply cannot stop checking out recipes on your blog. So far I have not found any one recipe that I don’t like. I may not make all of them because I am not sure I would buy some of the ingredients that will be used sparingly. But just browsing through the variety of recipes is simply wonderful. When did you start this blog? Do you develop recipes everyday? I have a major sweet tooth and I know this blog will be my go-to blog for sweet treats. Also love your soft-spoken personality on the YouTube channel. You are very nice to respond to all the comments here and on your YT channel. You certainly deserve more subscribers on YouTube.
Thank you SO much for your kind words, Mita! That truly means the world to me — about my blog, my recipes, my YouTube channel… My heart is absolutely glowing — I really appreciate it! 🙂 I actually talk a bit about why I started my blog on my “About” pages (here and here!) And yes, I end up baking more days than not during the week! 😉 If you’re concerned about certain ingredients you wouldn’t use a lot, then check the Notes section of my recipes; I usually include alternatives there. (Or use the search bar at the top of my blog [on desktop] or the bottom of my blog [on mobile] to find other recipes that use that particular ingredient!) I can’t wait to hear what recipes you decide to try!
I made this and my family loved it! We’ll be trying more of your recipes!
I’m so glad everyone enjoyed it! That means a lot to me that you’d like to try more of my recipes — I’m honored! I can’t wait to hear what you try next! 🙂
Hi Amy,
i have checked it and it is soooooo delicious. i was thinking and praying to god that to give me a wife like you minimum the delicious food will be available at home.thanks alot to be your cook.
Hi Amy,
I don’t eat meat can I make this without the turkey?
Thanks!
I’m honored that you’d like to try my recipe, Karen! You can definitely omit the turkey. One option would be to replace it with additional broccoli, or another option would be to replace it with your favorite vegetarian breakfast “sausage” that has been cooked and crumbled. (These vegetarian sausage patties are my favorite!) 🙂 I’d love to hear what you think of this quiche if you try making it!
Thanks for your quick reply Amy! One more question. If I used whole eggs instead of egg whites how many should I use?
Thanks Again!
Karen
It’s my pleasure, Karen! I’m happy to help. 🙂 If you’d like to use whole eggs, then 12 large eggs should be about the right amount. I can’t wait to hear what you think of this quiche!
Just wanted to tell you I loved your Father’s Day 2021 email! So genuine, and nice to hear of your bond.
You’re so thoughtful and sweet, Brie! Thank you for your kind words. It really means a lot that you’d take the time to do so!
Could this possibly be made and then frozenin serving size slices?
I really appreciate your interest in my recipe, Marsha! I haven’t tried freezing individual slices, so I’m not personally sure and don’t want to lead you astray. However, if you’ve been able to freeze other similar quiche recipes, then it’s probably worth trying with this one too!
I’d love to hear what you think of this quiche if you try making it!
