This cookie dough is absolutely irresistible — I made it every night for two weeks in a row! The sweet peanut butter flavor combined with the rich chocolate chips tastes phenomenal, and if you use warm milk, those chocolate chips start to melt when you mix them in. Pure bliss!
Whisk together the peanut flour, protein powder, and salt in a small bowl. Make a well in the center. Pour in the milk and stevia. Stir until fully incorporated. (The mixture may look crumbly!) Fold in the chocolate chips. Using a spatula or the back of a fork, gently press down on the mixture until it sticks together. Serve immediately.
Notes
PEANUT FLOUR NOTES: I absolutely love this peanut flour (← and I buy it online there!). This other peanut flour is very similar. PB2 may be substituted, but you may need to adjust the amount of milk since it doesn’t absorb the same amount of liquid.PROTEIN POWDER NOTES: This recipe was specifically designed for this soy protein isolate (soy protein powder). Almost all protein powders behave differently, especially when it comes to absorbing moisture. If you substitute a different plant-based protein powder, you may need to add more protein powder if the dough is too wet OR more milk if the dough is too dry.Do not substitute whey-based protein powder; the cookie dough will be a sticky, gooey mess.For more information on protein powder substitutes, see my Protein Powder FAQ page.MILK ALTERNATIVES + NOTES: Any milk may be substituted for the cashew milk.I highly recommend using really warm milk! If you use the chocolate chips linked in the Ingredients list, they’ll start to melt a little when you mix them in. That really takes this cookie dough over the top!STEVIA NOTES + ALTERNATIVES: I buy my liquid stevia online here because that's the best price I've found. You'll use it in all of these recipes of mine too!Any sweetener may be substituted in place of the liquid stevia. However, you may need to adjust the amount of peanut flour or soy protein powder if the dough is too wet -OR- add more milk if the dough is too dry. You’ll need the sweetness equivalent of 2 tablespoons of granulated sugar.GLUTEN FREE OPTION: No modifications necessary!EGG FREE, DAIRY FREE + VEGAN OPTION: No modifications necessary!{gluten free, dairy free, egg free, vegan, clean eating, low fat, low calorie, low carb, low sugar, high protein}
