These homemade crêpes are simple to make and filled with strawberries and Nutella. It's a classic combination — but a lightened up and healthier version! We love making them for breakfast, but you could easily serve them for dessert too. This recipe can also be doubled or tripled to make more!
Whisk together the flour, sugar, and salt in a medium bowl. Make a well in the center. In a small bowl, whisk together the Ener-G and warm water. Pour into the flour mixture, along with the milk and vanilla. Whisk the batter until smooth, and let it rest for 10 minutes.
Preheat an 8” pan coated with nonstick cooking spray over low heat. Using ¼ cup of batter at a time, pour into the center of the pan, and quickly swirl to evenly distribute the batter over the entire bottom of the pan. Cook for 1-2 minutes, or until the top of the crêpe dulls in color. Carefully flip the crêpe, and cook for another 30-60 seconds on the other side. Spread 2 strawberries’ slices across half of the crêpe, drizzle with 1 teaspoon of Nutella, and fold in half. Repeat with the remaining batter and fillings.

FLOUR SUBSTITUTES: Whole wheat pastry flour or all-purpose flour may be substituted for the white whole wheat flour. Regular whole wheat flour may also be substituted, but your crêpes will have a slight "wheat-y" flavor.GLUTEN-FREE OPTION: For the gluten-free flour, I recommend the following: ¼ cup (30g) millet flour, 2 tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice flour, and ¼ teaspoon xanthan gum. Most store-bought blends (like this one!) will work as well, if measured like this.ENER-G NOTE: If you prefer, substitute 1 large egg (at room temperature!) for both the Ener-G AND water. (Ener-G is my favorite egg replacer. It's a shelf-stable powder that keeps for ages. It works perfectly as an egg replacer in nearly all of my recipes!)MILK SUBSTITUTES: Any milk may be substituted for the unsweetened soy milk.NUTELLA NOTE: This is my healthy homemade Nutella recipe. (It has no dairy or sugar, so it's vegan, unlike the original store-bought version!)
