Throughout my early childhood, my family went camping multiple times each summer. We lived equidistant to Lake Tahoe and Yosemite, so we visited each at least once.
Although my brother and I loved swimming in the icy cold lakes and rivers the most, splashing around until our lips turned blue and our fingers looked like shriveled raisins, we also enjoyed hiking the dusty trails in the mornings⌠And Mom quickly figured out that she could bribe us to walk just a little bit further with special snacks!
In addition to jars of creamy peanut butter and sleeves of crunchy Ritz crackers, she also packed a few of our favorite chewy granola bars, the kind full of hearty oats and hints of cinnamon⌠And hopefully lots of chocolate chips or mini M&Ms too!
When I recently talked to my dad about his training hikes for his upcoming backpacking trip in September, I started thinking about those family camping trips from my childhood⌠And the sweet granola bar bribes!
But instead of dashing out to the grocery store to satisfy my newfound craving, I whipped up these Healthy Chocolate Chip Granola Bar Bites instead! Theyâre just as chewy as those store-bought ones and packed full of yummy chocolate⌠But they contain no refined sugar or strange artificial ingredients, and theyâre just 38 calories!
