Lemon Salt
from 101 Cookbooks
makes ½ cup
Feel free to try another citrus instead. Lime, orange, and grapefruit would all work well!
½ c. coarse sea salt
1 tbsp lemon zest
- Preheat the oven to 225°, and line a baking sheet with parchment paper.
- In a medium bowl, combine the salt and zest. Really work the zest into the salt, making sure there are no clumps of zest. Spread the seasoned salt across the parchment paper in a line, and bake at 225° for 60-70 min, or until the zest dries out and crumbles between your fingers. Store in an airtight container once cooled to room temperature.

Thanks! I haven’t used the lemon salt too much just yet, but I tried it on popcorn (yum!) and to season chicken. I think it’d be really fun to sprinkle it on homemade pretzels too!

All right, I do really like all the recipe’s I can make with Lemons, but specifically I want to know how to make lemon salt, and is it the same thing as lemon yest, (what is that anyway lemon yest that is?)

I posted the recipe for lemon salt at the end of the list of 101 different recipes. It’s rather short and really easy (placed right in between the 3rd and 4th photographs). But I haven’t heard of lemon “yest” before, only zest!

I disagree completly with your instructions you have destroyed your zest.
why you ask?
simple zest and oven DO NOT MIX
zest flavor = oil
heat + oil = evaporation and loss of flavor
If you think i am wrong make 2 batches of zest dry one in the oven and leave one to dry outside for a few days (yes it will take longer but then again by now we all know that the best things come to those who wait)
and use a food processor to combine the flavors
and then comapare the flavor levels in the 2
considering i have been working in the food industry for the past 12 years i think i can claim a little experience in the field.

102 – Lemon Sugar a great way to flavor tea and put a good spin on any dish using sugar
simply take a container and fill it with sugar (i use half a lemon peel on a cup)
1)fill a container with 1/3 sugar
2) take a lemon peel and try to remove as much of the white from the peel as possible without being to rough on it ( we are trying to maintain as much oil as possible)
3) cut it into strips and put them in the container
4) cover with sugar and close the container (air tight) *make sure not to fill the container to the top)
5) for the next week simply shake the container a few times a day to prevent clumping and then simply remove the lemon strips removing any sugar crystals from it * if its to clumpy simply run it a few pulses through a food processor
6) transfer to a preety jar and suprise your friends with a twist on flavor they did not expect from the sugar
works well with any citrus fruit
my fav are lemon lime and grapefruit
