On Monday evening, I loaded up my car with lots of heavy boxes and drove 80 miles south to my parents’ place, all while listening to my favorite baseball team’s game on the radio. The announcer’s soothing voice calling out every pitch and play made the trip speed by much faster than with a DJ’s song selections!
When I arrived, just after dusk turned to darkness, I found my mom on the driveway, frantically cramming her own boxes into my dad’s SUV—the very car I was supposed to drive back to my house. I needed something larger than my stereotypical sedan to move my mattress, road bike, and millions of baking supplies!
With my parents’ kitchen remodel scheduled to start with a demolition bright and early Tuesday morning, Mom had borrowed Dad’s vehicle to move the last few boxes of dishes and silverware into their own storage locker. So while she sped across town, Dad and I unloaded my office supplies and my guy’s collectible cards from my backseat and trunk.
All of that heavy lifting left me hungry, so I stopped in their near-empty kitchen in search of a snack while waiting for mom to return. I opened the fridge and found nothing but salami, cheese, and fruit, and the barren pantry only held s’mores fixings and chicken broth.
(Well okay… They also contained quite a few things I’m allergic to, but those don’t count!)
My rumbling stomach drove straight into the strawberries, but it still wanted more after devouring half the package. Thank goodness for these Dark Chocolate Blueberry Energy Bites I tucked into my purse! With their rich flavor and fudgy texture, they taste like an oatmeal cookie fell into a brownie. And they’re less than 135 calories with over 10 grams of protein!
You just need 4 ingredients to make this healthy snack: oats, cocoa powder, protein powder, and frozen blueberries. Yes, I’m at it with the frozen fruit again… I have to clear out my freezer before moving somehow! I used frozen wild blueberries because they generally have a sweeter flavor and smoother texture than regular ones, but both would work fine.
Note: Although I haven’t tried it, fresh blueberries would probably work too. You may need to add a little more liquid than the recipe calls for in order for the mixture to roll into balls.
For the protein powder, I reached for my favorite Plant Fusion Vanilla Bean. It has no funky aftertaste—just a pure vanilla flavor—so if you’re sensitive to whey, I highly recommend it. Plus it’s gluten-free, vegan, sugar-free, and low calorie… So these bites are too!
To make these skinny energy bites, stir together the dry ingredients in a bowl; then pulse the thawed blueberries in a food processor until smooth. (Remember to drain them first!) Add that purée to the bowl, and stir until everything begins to stick together. If the mixture looks dry, add a little water (1-2 teaspoons at a time) until it’s smooth and everything is incorporated. Then shape into balls and store in an airtight container… Or just eat them all right away!
With their decadent taste, I ate 2½ servings of these healthy Dark Chocolate Blueberry Energy Bites in a single day! They’re perfect for an afternoon pick-me-up, post-dinner snack, or curbing any chocolate cravings. Trust me, I used all three excuses…
So it’s already time to make more!
