School started this week in my hometown, and now that classes are back in session, that means a few things…
Firstly, the traffic is horrendous at certain times of the day. Our house is located a little over a mile away from one of the high schools in town, but it sits right off of the one and only street that leads to campus. Because of the hundreds of teenagers shuttling themselves to and from school, it’s impossible to turn off of our street to drive anywhere between 7:30 to 7:50 am and 2:50 to 3:10 pm.
No early morning or mid-afternoon coffee runs anymore!
Secondly, the changing speed limit always throws me off. The main street past the high school usually boasts a 45 mph sign since it runs parallel to the freeway and many commuters use it as an intercity option when traffic backs up. However, once the bells ring in the morning, the speed limit drops down to the standard 25 mph school zone speed.
My mom learned that the hard way one year, and that lesson has stuck with me ever since!
Finally, the grocery stores become the busiest places in town! We live a mile away from Safeway, and no matter what day of the week I stop by, I always see lots of moms pushing carts full of bread loaves, deli meat, bricks of cheese, and a few pounds of fresh produce.
Their children definitely get a better deal for their midday meals than the PB sandwiches I found in my lunch box during my childhood!
Even now as an adult, I’m actually a little bit jealous of the back-to-school lunch scene… At least half of the kids on the playground bring those cute bento-style lunch boxes in their backpacks, full of fun and healthy options, some of which are made from O Organics products found exclusively at Safeway. Things like DIY Strawberry Lemonade Fruit Leather, Chicken Salad Wraps, Turkey Pesto Pinwheels, and Apple Fries with Cinnamon Dipping Sauce.
I would’ve thought I had died and gone to heaven if I found any of those in my lunch box!
And inspired by that last recipe—who can resist fruit and yogurt??—I created my own healthy lunch box option so I wouldn’t miss out… Strawberries with Chocolate Protein Dipping Sauce! It’s easy, healthy, and requires just 4 ingredients!
The super simple recipe starts out with O Organics plain nonfat Greek yogurt. If you’ve been following my blog for a while, you’ll know how much I love Greek yogurt! It’s my favorite ingredient in healthier baking, especially because it packs in a huge protein punch. One cup of Greek yogurt has 21g+ of protein, compared to the 7-10g found in regular yogurt. That’s incredible!
Greek yogurt also has a thick and creamy texture, so it’s the perfect base for our dipping sauce. We’ll stir cocoa powder and stevia into the yogurt. Stevia is a plant-based no-calorie sweetener, and it’s very concentrated. A little goes a long way!
And finally, the fresh strawberries for dipping. I always pick the ripest, juiciest ones I can find, and I prefer the smaller ones because I like a large yogurt-to-fruit ratio. Combined with that sweet chocolaty sauce, this healthy lunch box option practically tastes like chocolate-covered strawberries!
Just make sure each kid gets their own container of dipping sauce… If I’m any indication, they’ll most likely double-dip to scrape up every last bit of the chocolaty yogurt!

- 1 cup (240g) O Organics plain nonfat Greek yogurt
- 1 ½ tbsp unsweetened cocoa powder
- 1 ½ tsp powdered stevia
- 1 ½ cups (210g) fresh strawberries
- Add the Greek yogurt, cocoa powder, and stevia to a small bowl. Stir until smooth. Serve with the fresh strawberries.
