Every summer Sunday, my church hosted a potluck brunch after the service. As soon as the sermon ended, the head organizers quietly left the sanctuary and set up two long folding tables in the courtyard, and members took turns bringing a dish to share.
While the savory options varied each week from things like deviled eggs and potato salad to mini spinach quiche and small two-bite slices of hoagie sandwiches, most of which I avoided, my sweet tooth could always count on something fun. With plenty of picky kids in the congregation, people brought plenty of fresh fruit, muffins, and donut holes!
I always picked the lemon poppy seed muffins, and if I found slivered almonds pressed into their tops, I carefully peeled them away before sinking my teeth into my first bite. I hated nuts in my baked treats back then, and even now, I’m not the biggest fan!
Because bakery-style muffins aren’t exactly the healthiest option, I created the recipe for these Lemon Poppy Seed Energy Bites to satisfy my cravings! They’re super easy to make (just watch my video below!), and they also contain 17g+ of protein!

These are so cute! And the video is too, obviously. I have to watch myself around lemon poppy seed goodies because I never wanna stop eating them. But since these are protein-packed, I’m sure they’d fill me up quick.

Aww thanks so much Phi!! Protein powders are my best friends right now… I don’t have the excuse of being pregnant, but I can’t always stomach (pun intended! 😉 ) the thought of meat when I’m craving protein! I’d love to hear what you think if you try these energy bites! ♡
