Nearly every year, my parents invite their old college friends over for a low-key Super Bowl party. People arrive in the early afternoon, and we spend time catching up before moving into the living room and turning on the TV.
As a huge sports fan, partially thanks to my dad, I actually prefer the football game to the commercials and watch every play. Some of the other ladies are the exact opposite… And they plan their snack breaks for when the players line up on the field so they don’t miss a minute of the TV ads!
There’s always more than enough food to go around since Dad loves to cook and everyone brings something, like fresh produce from their gardens or homemade smoked ribs. I usually bake dessert, but recently, I started whipping up a batch of this Ultimate Healthy Cornbread, too!
It’s perfect for pairing with chili and stew—and game day potlucks too, of course!—because of its supremely tender texture and rich, comforting flavor. This cornbread is also really easy to make, and it’s just 73 calories!

Another awesome video! Love the use of vanilla in the recipe – so unexpected; but it just goes to show how certain ingredients can enhance a recipe’s flavor, texture, etc.

LOVE the video! Cute as a button! <3 Your tip about using a fork to avoid overmixing is even new to me as a former professional baker! It just shows that every recipe is truly unique! None of what I ever baked was a lower calorie recipe like yours, so totally different. 😉

Awww thanks sweet pea! ♡ I’ve been using forks FOREVER (ummmmm since I first started baking, maybe? ?), so I forget that other people aren’t the same way. It’s so much easier to control the outcome of basic batters and doughs with a fork compared to mixers because your hand/arm/fork can reach all of the nooks and crannies of the bowl, whereas mixers (especially stand mixers) don’t always do a good job of that. Just some of the random things I’ve learned over the years! 😉

I think you must have more patience than I do- after using industrial mixers for 90% of our goods in bakeries, I definitely rely on my Kitchen Aid and food processor to do the work for me!! #lazy! Unless it’s a scone or biscuit- I would always hand-mix those! Next time I make one of your recipes I’ll put on some relaxing music and get to slow work with my fork! 😉 <3

I totally get where you’re coming from! As exclusively a home baker, there’s something SO satisfying and soothing about mixing everything by hand. (Unless it’s creaming butter and sugar or making cheesecake… My arm would fall of if I tried to do that without a mixer! 😉 )

This isn’t the one where you sound sick, is it? Cause you sound normal to me. I haven’t had corn bread in YEARS. I was actually JUST talking about it the other day with my step mom, how ironic. Can we still be friends when you get your own show on Food Network?? 😉

Nope, not the one where I sound sick! I film my episodes at least 2-3 weeks in advance to give my editor time to go through all of the footage. 😉 OF COURSE we can still be friends if I get a show on the Food Network!! You’re gonna be stuck with me for life! 😉
