School ended for the summer in my town this past week, so during the past two days while running errands, I spotted plenty of cars with “Congratulations Class of 2016!” scrawled across their windows in blue, yellow, and purple paint, the school colors of the two rival high schools here, and celebratory balloons in those same shades, as well as foil ones the shape of graduation caps, filling those cars’ insides.
When I finished my senior year, I headed off to college that fall with the plan of becoming a registered dietitian. After my first quarter, I quickly changed my major to chemistry, my favorite class at that time, and when I graduated four years later, I started graduate school with an emphasis in organic chemistry, still my favorite subject, assuming I’d work in the pharmaceutical industry upon finishing.
Yet here I am, working full-time at my dream job: Amy’s Healthy Baking! Yes, this blog has grown from a hobby and into my full-time job, and I feel so blessed to spend my days testing recipes, photographing sweet treats, and publishing them for you here and in my cookbook.
And that’s all because of you. Yes, YOU! You have made this amazing career of mine possible, by visiting Amy’s Healthy Baking and trying the recipes, sharing the treats with your family and friends, and giving them the links to try the recipes themselves, all while snapping pictures and sharing them with me through emails, on Facebook, and on Instagram. I’m so incredibly touched by your interest and support for Amy’s Healthy Baking!
So to say thank you, I’m putting the spotlight back on you today! Here are some of the recipes that you’ve baked and pictures that you’ve shared on Instagram. I truly appreciate each and every time you do that—it means the world to me! ♥
Would you like to see your picture in my next Sunday Spotlight? Then share it with me on Instagram using #amyshealthybaking and tag @amyshealthybaking IN the photo itself! (That guarantees that I’ll see the notification from you! ?) I can’t wait to see what recipes you make!

Thank you SO much for including my photo in the Spotlight series! It gives me more incentive to bake more of your goodies with the possible chance of being featured 😉
Aww, it’s my pleasure Marina! You’re SO sweet to bake so many of my recipes and share them on Instagram — I’m truly touched, lovely lady! ♥
I saw this book at Chapters that I think you would like, but I don’t remember what it’s called! Basically it was an entire book talking about the chemistry of cooking!! I thought it was really interesting 🙂
That definitely sounds right up my alley Leanne! You’re so sweet to think of me and mention the book! I’ll see if I can hunt around and figure out the title… 🙂
