The appetizers dictate the entire tone for every single dinner party. They’re the first thing people see as they walk in, they’re the main distraction from growling stomachs and nervous chitchat with complete strangers, and they’re the first bite of the night, which sets everyone’s expectations for the rest of the meal. Serve a lousy appetizer, and your guests will ask for their coats before you can even pour them drinks.
It doesn’t have to be fancy. I highly doubt I’d enjoy canapés smother in caviar anyway. Even something as simple as veggies and dip can ensure your party turns out wonderfully. But it does need to have flavor. And lots of it.
Most dips I’ve sampled are seriously lacking in the taste category. As bland and generic as Ranch dressing or as oily and greasy as jarred pesto, I’d much rather munch on the plain carrot and celery sticks than waste precious space in my stomach on those dips. Yet this one, in all of its glorious simplicity, had a tang and a crunch that made me forget all about saving room for the entrée.
Creamy Cucumber Dip
makes 2½ c.
The tart yogurt and sweet cucumbers perfectly complement each other! Serve with crackers, breadsticks, or cut-up veggies.
2 c. non-fat Greek yogurt
1 cucumber
- Finely dice the cucumber. Add cucumber and yogurt to a medium bowl, and chill in the refrigerator until ready to serve.
