Most days, I rush through the grocery store. Forget the cart: with my bad luck, mine veers off to the side from a sticky wheel and I waste precious minutes forcing it to roll down the aisle in a straight line. Instead, I grab a basked and haphazardly throw in food, bruising my leg with the cans and produce when it bangs against my shin as I power walk around the store.
Not fun.
But on the days without any meetings or appointments on my calendar, I slow down and savor the supermarket. I stroll up and down every (food) aisle, pausing in front of sale items and unusual ingredients. When I discover something interesting, I pull it off the shelf, pay for it at the check-out stands, and immediately begin searching for a recipe to use it in when I walk through the door at home. Â
With these super thin rice noodles, I found a simple yet mouthwatering dish that I put on the table in minutes. And it disappeared even faster! Everyone enjoyed the spicy lettuce wraps, and I already wrote ârice noodlesâ on my next grocery list so I can make another batch.

Be sure to serve with a few napkins; these can be a little drippy and messy! If youâd rather not eat them taco-style, shred the lettuce and top with the chicken-noodle mixture to make a salad instead.
- Evenly sprinkle the chicken with the salt, and in a pan coated with olive oil spray over medium-low heat, about 4-5 min per side or until done. Chop into small pieces.
- While the chicken cooks, cover the noodles with the boiling water, and let them sit for 5 min. Drain, rinse with cold water, and drain again. Cut the noodles.
- In a medium bowl, stir together the soy sauce, chile garlic paste, and sesame oil. Add the chicken, noodles, and carrots, and toss to coat. Tear the lettuce leaves into two or three pieces, and evenly divide the noodle mixture between each piece of lettuce.




This looks absolutely delicious and I think that my husband would really enjoy this! How spicy is it?? He likes a little kick.
Thanks! It’s spicy enough that I needed a glass of water, but not spicy enough that I had to down an entire gallon of milk. You can always have him taste a bit and add more of the chili garlic sauce if it’s too mild. I hope you both enjoy it!
