Finally, eons after moving into a new house (okay, more like two weeks), I unpacked the last of my cookie sheets and cake pans. Although the kitchen cabinets were designed for Amazons instead of 5’3” ladies, I still managed to pull the sugar down off of the top shelf without climbing on the counter. Or spilling any.
Because the first oven use is a sacred rite, I spent the past month debating what treat I wanted to bake. I ping ponged between countless cookies, cupcakes, pies, and granola, eventually narrowing down the list to four options. Since the fridge lacked crucial ingredients for three, these marbled chocolate muffins won by default. With such picture-perfect swirls of batter, I proudly plated my goodies for their photo shoot—and shamelessly scarfed one down as soon as it finished!

Don’t worry about perfectly centering the dollops of batter on top of one another. The crazier the batter, the cuter the muffin!
- Preheat the oven to 400°, and lightly coat 6 muffin cups with nonstick cooking spray.
- In a large bowl, stir together the flour, baking powder, salt, and sugar. In a small bowl, lightly beat the egg. Add the milk, oil, and vanilla. Make a well in the center of the dry ingredients, and pour in the wet, stirring just until moist. Divide the batter between two bowls, and stir the sifted cocoa powder into one.
- Add one heaping teaspoon of vanilla batter into each muffin cup, and drop one heaping teaspoon of the chocolate batter into the center of the vanilla batter. Continue alternating dollops of batter until both are used up. Bake the muffins at 400° for 18-20 min, or until the tops are golden and risen. Cool in the pan for 5 min before turning out onto a wire rack to cool completely.

While I wish I could go back and provide the nutrition information for all of my older recipes, it’d take months to do… And I’d much rather focus on creating new recipes for you to try! 🙂 I’d love to hear what you think if you try these muffins!

4/5 stars, this muffin was not sweet enough for me. I would add more sugar than what the recipe calls for. I really loved the pretty marble effect.
