If I were a superhero, I’d be so easy to beat. I have way too many weaknesses: dark chocolate, dangly earrings, Target tank tops, super sales, illustrated cookbooks… A trip to Walmart last month combined the last two, and as I pawed through a bin overflowing with bargain books, I felt my self-restraint shoot straight out the window.
I walked out of the store with two new cookbooks tucked into my bags. At home, I poured over each one, slowly tracing my finger down the list of ingredients and drooling over the full-page photograph accompanying each recipe. I slid scraps of paper between the pages to mark my favorites and scribbled down a grocery list.
The marbled chocolate muffins came from the first cookbook, as well as these devil’s food cupcakes. With their dense interior and mousse-like frosting, my chocolate kryptonite kicked in when I tasted them, and I gobbled down two within minutes of pulling them out of the fridge!

Keep these in the refrigerator until ready to serve. Top with bits of shaved chocolate or sprinkles.
- Preheat the oven to 350° and line 12 muffin cups with cupcake papers.
- To make the cupcakes, cream the butter and sugar in a large bowl. Add the vanilla and eggs, one at a time, mixing well after each addition. In a medium bowl, whisk together the flour, baking soda, salt, and cocoa. Alternately add the flour mixture and sour cream, beginning and ending with the flour. Do not overmix!
- Scoop the batter into the prepared tin, and bake at 350° for 18-20 min or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 min before turning out onto a wire rack to cool completely.
- To make the frosting, add the chocolate chips to a microwave-safe bowl, and microwave on high for 20 sec intervals, stirring in between each, until the chips are melted. (It should take about 60 sec total.) Let the chocolate cool for 5 min. Add in the remaining ingredients and stir until smooth. Spread a dollop of frosting on top of each cooled cupcake, and refrigerate the cupcakes before serving to let the frosting set.

Me too. It’s hard to find the time to bake and cook a lot, but it’s much easier with simple recipes! And there’s something gratifying about knowing that I made what I’m eating… I like to think it makes the food taste better too!
