Ever have one of those days where everything goes wrong?
You crashed your bike on a morning exercise ride and the chain fell off…
You spilled coffee on your white dry-clean-only dress shirt on the drive in to work…
Your friend canceled your lunch date at a trendy new bistro in town 5 minutes before noon…
The person in front of you at the grocery checkout stand bought the last bag of freshly baked bread…
You banged your shin on the coffee table while cleaning up the kids’ Barbies and Legos…
The dog jumped up on the kitchen counter and inhaled half of your fresh-baked cookies meant for your weekly book club…
Even if only two or three of those happened to me, I’d throw in the towel, wave the little white flag, and devour any- and everything chocolatey that hid in the pantry (or freezer or fridge). But since I find baking with chocolate even more therapeutic than just binging on store-bought cakes and cookies, I mixed up a batch of these (aptly named) rocky road muffins during my last jelly-side-down day.
By the time I nibbled my way through one okay two, a bright smile had returned to my face and I was ready to face the next day… Chocolate in hand, of course!

When the marshmallows ooze out of the batter in the oven, the fluff caramelizes and gives the muffins an irresistible sweetness! Save the leftovers in an airtight container, and microwave for 10-15 seconds to reheat.
- Preheat the oven to 400°, and lightly coat 12 muffin cups with nonstick cooking spray.
- In a large bowl, whisk together the flour, sugar, cocoa, baking powder, and salt. In a medium bowl, whisk together the eggs, milk, yogurt, and vanilla. Make a well in the center of the dry ingredients, and pour in the wet, stirring just until incorporated. Fold in the marshmallows and chocolate chips.
- Pour the batter into the prepared muffin cups, and bake at 400° for 20-24 min or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 min before turning out onto a wire rack to cool completely.
Everything is better with chocolate…..this looks enticing!

These look fantastic! I LOVE Rocky Road ice cream but with the weather getting cooler these might be a more practical option! Cannot wait to try!

Oh my, thanks for catching that Janet! It’s supposed to be 1/3 cup of yogurt. The recipe plug-in I use doesn’t recognize the character “⅓” and I forgot to change it to regular numbers. I’ve updated the recipe, so thanks again! 🙂
