As a kid, I loved popping open the plastic eggs in my basket from the Easter bunny as soon as I woke up and dashed downstairs on Sunday morning. I carefully shook each one, posing a guess in my head as to its contents, before revealing what hid inside.
Out spilled Starburst-flavored jelly beans in cherry, green apple, orange, lemon, grape, and strawberry… Miniature chocolate eggs, carefully wrapped in pastel blue foil… And somehow, an entire Peep—a large chick-shaped marshmallow coated in yellow sugar—managed to fit inside a few of those plastic eggs!
As I grew older, I started looking forward to our Easter dinner and homemade sweets more than the early morning candy… Like some of the baked treats you’ve been making and sharing with me on Instagam!
I get so excited every time you do that, just like my little kid self on Easter morning going through my basket! Whenever you try my recipes, share the links to those recipes with your family and friends, post pictures of them for me to see on Facebook and Instagram…

Hi Amy, I make your banana oat bran muffins each week. My husband takes one to work along with a couple muffin tin egg bakes I make him as breakfast. I know he is putting butter on the muffin at work and I don’t worry cause I only added a tablespoon of coconut oil to the recipe. This week I realized I was out of molasses and am sick with a virus from my preschooler grandson so I did not want to hack my way to the store. I replaced the molasses with maple syrup and they are divine! I change it up with dried fruit or some nuts on top depending on what I have on hand but your chemistry still holds. Jeanette, I’m so glad you posted this tip! I haven’t made Amy’s bran muffins (even though they are some of my favorite) since I had to give up cane sugar and all by-products (including molasses) but now I HAVE to try them with maple syrup instead! To the kitchen!! 🙂
