On the 4th of July this year, Grandma and I decided to avoid the heat and crowds, so we spent the afternoon watching a baseball game on TV instead. I brought my little dog over for a play date with her pups too—she loves exploring Grandma’s spacious backyard!
Shortly before the game started, I dashed out to Panera to grab salads so neither of us had to cook. We sent in our order ahead of time using the restaurant’s smartphone app, so by the time I pulled into the parking lot, our take-out bag sat waiting on the pick-up counter shelves.
As I walked out, big brown bag in hand, I noticed a few college students sitting on the front patio, typing on their laptops and nibbling on Panera muffins as they worked. Although I contemplated dashing back inside to buy one of my own (the seasonal ones with fresh fruit looked so tempting!)…
I held off and baked these Healthy Small Batch Maple Peach Muffins the next day instead! They’re bursting with sweet juicy fruit and made with entirely wholesome, good-for-you ingredients, unlike those restaurant ones. They’re so easy to whip up (you just need a fork and bowls—no mixer required!) and only 133 calories!
