Over three years ago, one of the news anchors from a local TV station contacted me on Twitter to see if I’d be interested in coming on their show. After staring at my computer screen in absolute shock, I managed to send her a response with an emphatic YES!
We picked a date in early November, and on that Saturday morning, I arrived at the studio bright and early. They gave me two very brief segments to highlight a couple of my favorite fall-flavored recipes, and both sets flew by in the blink of an eye. Such an adrenaline rush… But I loved every second!
Since then, I’ve really wanted to have my own TV show, something like “The Pioneer Woman” or “Barefoot Contessa” or “Everyday Italian”—just with my own healthy baking theme! And today, I’m taking the first big step towards achieving that dream…
I’m starting my own YouTube TV show with my Ultimate Healthy Lemon Poppy Seed Muffins as the first episode’s recipe!
I’m positively giddy with excitement… I’m basically bouncing up and down in my chair as I type this, just like little kid on Christmas morning! I can’t wait to hear what you think of my show!

The muffins were good. I would have liked for them to be a little bit sweeter maybe add more honey or stevia. They were great with a cup of coffee!
I’m glad you enjoyed them Kristy! You could easily add an additional ¼ to ½ teaspoon of the vanilla stevia to make the muffins sweeter! 🙂

Loved the video. Can I substitute a healthier flour like spelt or green banana flour or ground oats for oat flour? Green banana flour is amazing. Looks like a great recipe!!

For the best results, I recommend using one of the flour options I listed in the Ingredients list or Notes section underneath the Instructions. Thanks for the reply. I knew you used a scale, just not sure what the correct procedure is when doing that. I did it once & wasn’t pleased with how the brownies I tried worked out, so guessing I must not have done something right.

I came from the world of organic chemistry, where we used incredibly sensitive scales to weigh everything, so I tend to forget that other people don’t feel quite as comfortable around scales as I do. 😉 I’ve made a note of your request, and I’ll try to cover that in an upcoming episode video!

Amy, these look delicious. I will definitely give them a try. If you use regular muffin pans, should you spray them so that the muffins do not stick, or use muffin liners? Looking forward to watching you on YouTube.

Congratulations on your new channel. I am your 75th subscriber! I subscribe to your e-mails and have to say that I am more apt to watch a video when it comes to recipes- I find that I will then actually make the food! Your video was very good and I learned something- I wondered why all my lower fat recipes always turned out gummy- I was combining the ingredients in my mixer, so thank you for this tip. I had written off many recipes because of this and I am now going to try them again. Please take the following as positive feedback- I think it would be helpful if while you are making your recipe that there are pop ups stating the exact measurements of each ingredient when you are adding them, along with the cooking instructions. It may sound silly, but sometimes I am watching a video with the sound down low or off as a courtesy to others in the room. I preview videos this way a lot ( my husband likes to watch gold rush and other-yawn- reality shows)- If I can watch the process and read the ingredients at the same time, I will know if I have everything I need to make the recipe.
