Many weekends throughout my childhood, Mom would make pancakes for breakfast. She allowed my brother and me watch Gullah Gullah Island while she cooked, one of our favorite TV shows back then, and by the time the episode ended, she had poured glasses of juice for us and had many dollops of batter bubbling away in the pans.
We clambered up onto our designated chairs as Mom carried two plates of silver dollar pancakes over to us. She set out the “kiddie” syrup and let us drizzle it all over our special breakfast treat. (Because we poured on so much, she bought the Log Cabin pancake syrup for us, which was 1/10th of the price of the “adult” real maple syrup!)
Once we reassured her we were full, she tossed a few handfuls of blueberries into the remaining batter. Back then, my brother and I hated “bits” in our food—everything from nuts in cookies to onions in spaghetti sauce, and yes, even blueberries in pancakes!—so we never asked for a bite of hers.
Yet as we grew older, my brother and I eventually realized that the fresh fruit made Mom’s pancakes taste even better than our plain ones… So now we’re all fans of these Healthy Blueberry Buttermilk Pancake Bites! The batter tastes just like the pancakes we grew up eating, and the juicy berries add a bright pop of sweet flavor. And they’re just 29 calories!

The Gullah Gullah Island reference is priceless – that was one of my favorite childhood shows! And love these portable pancake bites – blueberry pancakes are the best, in my opinion. As for the episode: especially great tip about why the vanilla is added to the mixture! And I too had Mickey Mouse-shaped pancakes growing up; and hooray for breakfast for dinner 😉

WOW!! We’re basically twins! I had no idea you watched Gullah Gullah Island as a child too… And Mickey Mouse pancakes as well! Those were always my favorite. I actually went to a restaurant that served them while on vacation as an adult, and of course I had to order one! 😉

No, I didn’t! We stuck with Gullah Gullah Island, Blue’s Clues, Arthur (truly a favorite!), and Zooboomafoo. Oh, and The Magic School Bus — we loved the books too! 🙂

Hello Amy! I have a question. If you use the powdered buttermilk instead of the liquid, is the measurement still 1/2 cup?

I really appreciate your interest in my recipe Dawn! If you look on the side of the powdered buttermilk container, it should tell you how much powder + water you need per cup of regular buttermilk. It can be easy to miss that on the label! 😉 If you have the same one that I use, you’ll need 2 tablespoons of powder + ½ cup water. Mix the powdered buttermilk into the flour mixture, and add the water where my recipe calls for buttermilk. (If you add the powder to the water, it usually turns lumpy!) I can’t wait to hear what you think of these pancake bites! 🙂
