After coming home with a craving for Asian food, I started scrounging around my kitchen. There was a stalk of broccoli in my fridge, rice in the pantry, but no beef. What was I supposed to do? Like any other creative girl, I picked the next “B” ingredient that came to mind: beans! Since I didn’t have to wait for any meat to brown, this vegetarian twist on beef and broccoli came together even faster than my rice cooked. Even if you don’t have beef with beef, give it a try – it’s a simple dish for an easy weeknight meal.
Bean and Broccoli Stir Fry
serves 1
Increase the amount of pepper as your taste buds can handle! Serve with rice.
¾ – 1 c. broccoli florets, cut into bite-sized pieces
½ c. canned garbanzo beans, rinsed and drained
⅛ tsp red pepper flakes
1½ tsp soy sauce
olive oil
- Heat 2-3 tsp olive oil in a small skillet over medium-low heat. Add broccoli and sauté until color begins to darken. Add garbanzo beans and pepper flakes, stirring frequently.
- Add soy sauce and cook another 1-2 minutes until heated. Serve hot with rice.
I have never tried chickea and broccoli together before. This looks really healthy and yummy!

I too have these ingredients in my fridge. Would substituting Great Northern beans for chickpeas work? We are also a pro garlic household so there have been some requests to add roasted garlic and onions to the dish! Thanks for the great ideas 😉
Yes, Great Northern beans would work wonderfully! When I first made the dish, I wasn’t too big on garlic, but I’ve learned to enjoy the taste since then. My guy’s love of garlic may have had something to do with it. 😉 I’d love to hear how the meal turns out for you Angela!
