When I was little, everything had to be pink. My bedspread, the paint on my walls, my clothes… I threw a fit whenever my parents tried to put me in blue. That was a boy’s color!
By the time I started 3rd grade, I had outgrown my pink obsession, and I bravely began to wear clothes in other colors. But whenever Valentine’s Day rolled around, I regressed back to my 4-year-old self and went all out—including pink socks, hair ribbons, and fingernail polish.
Because I won’t be quite as festively clothed when celebrating today, I dressed up my dessert instead. Pretty, pink, and peppermint… What girl could possibly resist?
Definitely not me! These little treats turned out absolutely irresistible, with the perfect delicate balance of moist peppermint cake and creamy vanilla frosting. With a dainty dusting of red sugar sprinkles, it took all of my willpower not to eat the whole batch!
Peppermint Pink Cupcakes
makes 24
Perfect for Valentine’s Day or any little girl’s birthday!
1 box white cake mix
*3 egg whites
*1⅓ c. water
*2 tbsp vegetable oil
1 tsp peppermint extract
20 drops red food coloring
1 can vanilla frosting
red sugar sprinkles
- Preheat oven to 350° (or what the cake mix calls for). Line 24 muffin cups with paper cupcake liners.
- Prepare white cake mix according to the package directions. Add peppermint and red food coloring with all of the other ingredients.
- Pour batter into prepared cupcake liners. Bake for 21-25* minutes, or until a toothpick inserted into the center of one comes out clean. Cool in the pan for 2 minutes, then turn out onto a wire rack to cool completely.
- Frost the cupcakes with the vanilla frosting and top with sprinkles.
*These were the directions on the back of a Ducan Hines white cake mix box. Adjust according to your brand’s directions.
