I was amazed by your responses to my mini series on sweet and sneaky ways to eat your veggies. I expected people to think my recipes were insane, or maybe imaginative at best, but you surprised me with many thoughtful compliments instead!
I smiled while reading each of your comments, and a few of them really touched my heart.
Norah wrote about the carrot cake oatmeal, “I love this idea! As a chef who prepares food for children on a daily basis I thing I could use this idea for other food items on our menu. That’s such a great idea!”
In response to the caramelized onion breakfast muffins, Brittany said, “I loveeee onions. The onion wrapped around that muffin and baked into the sides looks amazing!” while Mrs. Webb added, “Brain exploding! This is so different and weird but it sounds amazing!”
Liz replied to the pumpkin custards, “I see I’m in good company having stockpiles of (fresh :)) pumpkin puree in my freezer. Now I know exactly what to do with them.”
And on the fudgy beet brownies, Benjamin commented, “This has got me veryveryvery excited! What an interesting recipe! 🙂 I adore beetroot, looks like they lended their beautiful colour to these brownies too.”
With such encouraging responses, I’ve already started to plan a sequel series! I want to tailor this one to your tastes, so tell me…

Mmm… I’d love to see a green! Spinach or kale! My friend and I visited a vegan/raw cafe last week, and they were selling muffins the most wild shade of green. Didn’t get a chance to try, but I bet greens were in there!

I’ll put them both on the list! What’d you try at the vegan café? I haven’t been to one for close to 6 years, mainly because there aren’t very many in our area, but I’d love to try a new dish!

I had what they called the “goddess burger;” a veggie patty loaded with veggies, served open-faced on a gluten-free bun, and topped with beets, a yummy sauce, and their “goddess salad.” Then my friend and I split a coconut macaroon! Everything was great.

Yum, that sounds amazing!! I generally think that two fluffy burger buns is slightly excessive, so I really like the idea of an open-faced veggie burger. And the coconut macaroon sounds delightful!

Brussels Sprouts!! Simply because I LOVE them and have found no other way to eat them than roasted of sauteed in their own goodness!

Planning more recipes? WICKED! I see someone said cauliflower, which works well with berries, raspberry being my favourite 🙂 Just a little tip if you are stuck for ideas. Which im sure you won’t be. Will be checking up everyday for these new recipes!

Thanks! They’re definitely worth trying. You can’t even taste the beets, so the brownies feel like a really decadent dessert (even though they’re secretly healthy)!
