“D’you want a snack?”
“Uhh, sure!”
“How about celery? We have lots!”
(Blank stare.)
“What, celery tastes good! And it’s healthy too!”
(Blink blink.)
“Okay… Umm, how about a sandwich then?”
I overheard this conversation between my younger brother and his best friend last week. They spent the day in true Spring Break style, twiddling their thumbs over video game controllers while trance beats thumped out of their laptop speakers.
Despite sharing lots of interests, the two teenagers still differed slightly in their tastes in food. Vegetables, specifically. My brother and I inherited the celery gene (it somehow leapfrogged our mother), whereas his best friend and most of the world… Well, didn’t.
So a few days later, I tossed together this salad with three of my brother’s favorite foods: celery, strawberries, and kale!
The sweet and savory ingredients blend really nicely in this salad! Add chicken or tofu for a more substantial meal.
- In a medium bowl, drizzle the balsamic vinegar over the kale, and toss to coat the leaves evenly. Add the strawberries and celery, reserving 2 teaspoons of each, and toss to combine. Plate and top with the remaining strawberries, celery, and the feta cheese.

Me too! One of my favorite salads is spinach, strawberries, grapes, candied walnuts, and chicken with a fruity balsamic vinaigrette. (Surprisingly, I found it on a pub’s menu!)

In my defense, I’ve eaten a lot of really awful celery in my life. This salad looks infinitely more edible… and not too heavy on the celery. =)

And also in your defense, my brother has a lot of crazy ideas — so you have every right to be wary of anything he suggests! :] The sweet strawberries distract a bit from the celery, so it mainly added “crunch” and not so much flavor. Maybe we can arrange for you to try it during your next break!

YUM! Looks like my kind of salad. I’m making this immediately (great way to use up the rest of my celery). I rarely eat cheese, but I’m definitely adding some goat cheese to this. Thanks for the idea!

I made it last night for dinner 🙂 and even took pictures to show you! – I’ll repost your recipe so you can see them 🙂 I added a little olive oil to it in addition to the balsamic vinegar. Pretty taste-y. I had never tasted strawberries and celery together – very interesting mixture.

YUMMY!! My youngest daughter LOVES any and all vegetables. She actually would choose them over sweets. Sigh….If only I had that problem! Maybe more salads like this one would help me! 🙂
