The last time I visited my parents, I begged them to eat at our favorite breakfast restaurant. The hour-long drive dragged on a bit too long with three hungry people in the car, so we placed our order the minute a waiter set menus on our table.
While Daddy generally selects one of the specials, Mom predictably chooses one of three meals: scrambled eggs with cheese (for comfort food fixes), steamed veggies with eggs (for healthier days), or huevos rancheros (the fun one): scrambled eggs, salsa, black beans, and cheese served over a whole wheat tortilla. (I always ask for their biggest piece of blueberry coffee cake, but that’s a story for a different day!)
After arriving back at my own home a few days later, the last few hardboiled Easter eggs called out from the fridge, challenging me to make something with them. I laughed, still thinking of my mom’s breakfast decision, and readily accepted. I put a twist on her meal and created deviled huevos rancheros instead!
These aren’t quite true “deviled” eggs since I used cheese and salsa instead of the yolk and mayo, but they’re slightly healthier. They can be a bit messy if rolled up as a burrito if the salsa drips out the side, but no one will mind if you serve them with napkins! (Or a fork and knife, just to be safe…)
- Preheat the oven to 350°, and lightly coat a baking sheet with nonstick cooking spray.
- Peel the hardboiled eggs, and slice each in half. Discard the yolk, and place the egg whites flat-side-up on the prepared baking sheet. Sprinkle 1½ teaspoons of cheese over each egg half, and bake at 350° for 3-4 minutes, or until the cheese melts.
- While baking the eggs, place the black beans in a microwave-safe bowl, and cover with a paper towel. Microwave on HIGH for 1 minute, or until hot.
- Optional: Once the egg whites finish baking, cut into bite-sized pieces.
- To assemble, place 2 tablespoons of black beans down the center of each tortilla. Place two egg whites on the black beans, and top with 1 tablespoon of salsa. Serve immediately.

Definitely! When you have to get up so early for work, I’m sure it’s hard to spend a decent amount of time cooking breakfast. But all those gorgeous desserts you make are so worth it! ;]

I love this, it’s so creative! And my favorite 8-minute meal of all time is huevos rancheros. It’s some old recipe from Real Simple, but it’s seriously so good!

What a small world! I had only seen huevos rancheros at this particular restaurant before, so I didn’t realize it was so common. I need to get out and experience other cultures (and apparently read Real Simple) more! :]
