I’m thrilled to introduce Karey, the author of “Nutty About Health”. She began blogging about food and fitness over a year ago, while still working and going back to school for a degree in Dietetics. Add in spending time with her dog, cat, and husband on top of that, and I’m amazed by how she stays sane and so sweet all the time!
Because Karey wants to stay healthy and still satisfy her inner “Sugar Monster,” she has developed quite a few tasty recipes that I’m itching to try. After drooling over her PB Dream Pancakes, Healthy Peanut Butter Blossoms, and Dark Chocolate PB and Banana French Toast (and realizing I really needed to crack open my own jar of peanut butter), I finally asked if she would share her decadent chocolate flax pancakes with you.
Karey readily agreed, so I’ll let her take it from here!
Thanks for the amazing write-up Amy! I’m blushing. I’m very excited to spread some healthy pancake love on your blog today.
I have a delicious gluten & grain-free pancake recipe to share with you all today. Plus, it uses flaxseed meal, so it’s packed with ALA’s…. if you’re not familiar with ALA’s, they’re an essential fatty acid that can be converted in the body to EPA & DHA, which is vital for body health. Oh, & did I mention that these pancakes are chocolate?! Just wanted to make sure. 😉
These pancakes are made with flaxseed meal, making them gluten-free, full of fiber, & low-carb/keto diet friendly (if you leave off all the extra fruit). This recipe is very similar to my other flax pancake recipes, but this one is chocolate! Who doesn’t like to get their chocolate fix on?
Delicious chocolatey low-carb/keto pancakes if done without the fruit, or extra delicious with it, yum!!
- Heat a non-stick pan or griddle coated with some non-stick spray to medium heat.
- In a medium bowl or mixing cup, combine 4 egg whites & stevia. Whisk together.
- Add flaxseed meal to the egg & whisk well.
- Whisk in a tbsp of cocoa powder.
- Add the baking powder & whisk… it will be slightly lumpy. Set aside for at least a minute.
- Wash & chop fresh fruit & get PB ready for topping, if desired. Set aside.
- Whisk egg & flaxseed mixture together again (it will be fluffier by now), then pour on griddle. Flip after 30-60 seconds, when it starts to look solid on the bottom.
- Once pancakes are done, stack them on the plate, then top with the fresh fruit & drizzle some warm PB (or syrup) on top.
- Dig in!!
Thank you for sharing your pancakes, Karey! Be sure to check out her blog and follow along on Twitter, Facebook, Pinterest, and Instagram too!

Oh man I love me some pancakes. I also love sneaking things like FLAX into them! These look delishhh.

Me too; I’m a huge pancake (and waffle) fan! I hadn’t thought to sneak in flax before, so I’m really glad Karey did that. And you really can’t beat chocolate either!

Thanks Jessie! I’m glad to hear that you like the nutrition information. I can’t take credit for the recipe though; that’s all thanks to Karey!

Found you through Pinterest:) tasty recipe! I was really low on egg whites so I ended up using maybe a tbsp of egg whites, then 1/4 cup plain Greek yogurt (non fat) tuned out wonderful! Thanks for the recipe!

You’re welcome Christy! I’m a huge fan of Greek yogurt (I always keep a container of plain nonfat in my fridge too), so I love your substitution! I’m really happy you enjoyed the pancakes! 🙂

Hey! I am doing keto so always trying to get my fat up higher. Is there a reason you use egg whites instead of whole eggs? If I were to use whole eggs instead of just whites, any idea how many I should use? Thanks!
