“Table for Two” Cookbook Update: It’s ALMOST done! I photographed the last dish today, and I’ll publish it this weekend after a few editing and formatting tweaks. I’m so excited about this cookbook and cannot wait to share it with you!
In April, I borrowed my mom’s culinary torch for one of the cookbook recipes (any guess what it is??). Before I even walked into the kitchen, my guy had already filled it with butane and toasted the nearest edible object: a marshmallow peep. After browning an entire box of those, he moved on to the marshmallow bunnies, turning them a nice golden color (with a few freckle “burns”).
Over the next two months, I finally tested out the torch, and after I got the hang of it, we spent hours making midnight s’mores snacks. No wonder they’re called s’mores… I’m addicted!
When I saw leftover Oreos on the counter last week from another round of mini hula pies, and peanut butter chips from my triple threat peanut butter cookies, and the culinary torch, a cartoon light bulb above my head lit up. I had to try it!
Oh. My. Goodness. Gooey marshmallow, creamy peanut butter, and crunchy chocolate… These are bites of pure bliss. Like Oreos met Reese’s cups with a little extra marshmallow magic. I might never make a regular s’more again—these peanut butter Oreo ones are just too good!
These taste like a cross between a Reese’s peanut butter cup and an Oreo! Watch out, they’re highly addictive…
- Using a slightly damp knife, slice each marshmallow in half horizontally to get two circles. Lightly toast each marshmallow half using a crème brûlée torch, a broiler, or over a campfire.
- Place 5 peanut butter chips onto the flat side of 10 Oreo cookies, and microwave for 10-20 seconds, or until slightly melted. Place one toasted marshmallow half on the peanut butter chips, and top with another Oreo cookie. Press down slightly, and eat immediately.
