As an eight-year-old, I attempted to bake something entirely by myself for the first time. While my mom and brother read picture books upstairs, I pulled our children’s cookbook off of its shelf, thumbed through the pages, and stopped when I reached the muffin recipe.
After locating all of the ingredients in our pantry and fridge, I measured and stirred them together in our big metal mixing bowls. I carefully peeled apart the stack of paper liners, dropping one into each cavity in our well-worn muffin tins, and filled them with dollops of batter. Then…
I ran upstairs to show Mom what I had done and ask her to put the muffin tins in the oven. I knew I wasn’t allowed to touch it yet—she didn’t want me to burn myself!
Although I’m now old enough and fully capable of using the oven by myself, muffins are still one of my very favorite things to bake. There’s something so magical about watching the batter rise into tall, perfectly domed tops through the glass window in the door, and biting into one of those tender treats still warm and fresh from the oven with its cozy, comforting flavors practically melting on my tongue… Pure bliss.
But I prefer my muffins to be much healthier than that first recipe that I ever made, which is why I’ve rounded up these absolutely amazing 13 must-try clean eating muffin recipes to share with you! Mmm…these muffin recipes look so delicious – I can’t decide which to choose first! Exciting news – my vanilla creme Stevia FINALLY arrived today, yay!? When I opened the package, this wonderful vanilla aroma emerged and filled the whole room! I’m really looking forward to baking with it – in fact, I’ll try one of these muffin recipes! ☺
