To celebrate Pi Day this past week (3.14, if you aren’t as nerdy as my family!), my mom’s office threw a big party for all of their employees. During the lunch hour, they set out nine savory and eight sweet pies in their kitchen and dining area, and they scheduled multiple fun pi-related activities for the afternoon.
The day before, Mom decided to participate in the recitation contest, where whoever could reel off the most digits would be deemed the winner. By memorizing the numbers in groups of three and using the alphabet song’s melody, she sang her way through 72 digits—almost twice as many as anyone else!
Although I wanted to celebrate Pi Day with something just as fun (or at least just as sweet!), I felt a little too lazy to memorize that many numbers or make the flaky homemade crust from scratch for either my ultimate healthy pumpkin pie or apple pie… So I improvised with another favorite recipe of mine: these Healthy Apple Pie Oatmeal Cookies! They have the same sweet and cozy flavors, but they contain no butter, refined flour to sugar and just 97 calories!
