A few years ago after spending two days in Disneyland with a friend, we decided to stop by the grocery store before our long road trip home to pick up snacks for the drive. We grabbed chips and soda for him first, then headed over to the produce section for me.
I intended to pick up a package of fresh berries or grapes—something easy and not overly messy!—but I nearly forgot all about my plan when I spotted the huge display of peaches. “Sale!” shouted the sign. “$0.99 per pound!”
I immediately reached for a bag and filled it with huge juicy peaches. Since I promised my parents I’d stay with them for a few days after my short Disneyland vacation, I wanted to bring as many of those peaches as I could so Mom and I could bake my grandma’s famous peach pie!
When my brother and I drove past the Disneyland freeway exit last month on our way to Southern California, I briefly thought about that trip and those incredible peaches… But instead of baking Grandma’s {supremely buttery} peach pie to satisfy my cravings, I made these Healthy Peach Pie Oatmeal Cookies this time instead!
With the same summery sweet flavors as Grandma’s recipe, these cookies are just as irresistible… But they’re much faster to make and healthier too—just 96 calories and no refined flour or sugar!
