Towards the beginning of my junior year of college, I decided to try baking my own granola. Between breakfasts, snacks, and pre-bedtime treats, I could easily polish off a store-bought box in just a few days!
I looked at a few recipes from my favorite cookbooks for inspiration, but when I walked into my kitchen, I set those aside and made up my own recipe as I went along. An hour later when I pulled the pan out of the oven, it felt like pure torture to wait for my granola to cool… And that batch barely lasted a week. It tasted even better than the store-bought ones!
Over the next few years, I continued to bake granola nearly ever week and experimented with different flavors, cereals, and mix-ins. Most of the time, my batches resulted in fairly crunchy clusters, although sometimes the clusters fell apart and other times they tasted a little chewy instead.
Then two years ago, my friend Phi shared her secret baking method with me for getting extra crunchy clusters in every batch of homemade granola. I immediately tried it and…

So today, I’m sharing that secret trick with you, along with this recipe for Healthy Chocolate Chip Peanut Butter Granola! The granola recipe itself is really easy to make. It uses just 6 ingredients, and it almost tastes like you’re eating {crunchy} peanut butter cups for breakfast!

Definitely can’t beat homemade granola, or anything chocolate-peanut butter flavored. Love that this recipe uses egg whites and rice cereal, to eliminate the excessive, unnecessary ingredients found in a lot of store-bought granolas; and it’s sweet that the ingredient combination (with the peanut butter & honey) remind you of your brother. As for the ending: chocolate chips for the win 🙂

I really appreciate your interest in my recipe Ilene! For the best results, I recommend using regular natural-style creamy peanut butter, rather than PB2. It doesn’t always behave the same in baking recipes, and I don’t want you to ruin your granola by using it! 🙂 I’d love to hear what you think if you try this granola!
