“Let’s spend the day boating and fishing on the Mississippi River!”
Never mind that I forgot my flip flops at home in California. Or that my stomach lurched at the sight of wriggling worm bait. Or that my teeth chattered constantly from the blowing winds and cloudy skies. Â
No, my family was bound and determined to get me on that river.
Despite staying bundled up in beach towels most of the day (I conveniently left my fleece jackets back with my sandals), I actually enjoyed myself! I held the fishing pole a few times—never felt anything tugging on it though—and sampled my first serving of Greek yogurt while the rest of our friends munched on cheese and salami (or hummus, for the vegetarian sailors) sandwiches for lunch.
Three years later, I eat Greek yogurt nearly every day, whether it’s breakfast, lunch, or dinner. And with the weather warming up, I’ll enjoy it for dessert too—but frozen instead!
This is a really easy and refreshing dessert! Serve in sugar cones for an even sweeter touch.
- Stir together the yogurt and candied ginger in a medium bowl. Using an ice cream maker, freeze according to the manufacturer’s instructions. Serve immediately for a soft-serve consistency, or freeze for at least 4 hours for a more frozen texture.

Thanks! I was inspired by a friend’s Instagram photo of her strawberry ginger gelato. It sounded so good that I just had to make my own frozen dessert too!

It’s true! I only discovered candied ginger this past winter, but I use every excuse I can to bake with it. (Or just eat it as a snack!)

Thanks! The best part is that we couldn’t even tell it was healthy — it tasted just as indulgent as ice cream or gelato. I love it when healthy treats taste just as good as their more indulgent counterparts!
