Although my mom rarely baked while I was growing up, we could usually count on at least one batch of homemade chocolate chip cookies and two rounds of banana muffins every month. The cookies appeared in our lunchboxes at school, and we devoured the muffins as both breakfasts and afternoon snacks. Neither baked treat ever lasted long!
The baking gene must have skipped a generation because I pull out my mixing bowls to make treats (normally twice!) practically every singe day… But like my mom, cookies and muffins are two of my favorite things to bake and eat.

Have you used coconut flour for baking muffins. I love coconut and just bought some flour but wasn’t sure when or how to use it. These recipes look delicious so I will make even if I can’t use the coconut flour. Starting with one with bananas ?
