Last weekend, my dad invited some of his college buddies over for dinner followed by their annual penny poker night. When he asked if I’d make my ultimate healthy cornbread to go along with their grilled sausages, garlic mashed potatoes, and sautéed veggies, I immediately agreed.
My mom and I sat with the guys for over an hour while everyone ate, traded stories, and got caught up on each other’s lives, and when they headed out to Dad’s workshop in the backyard to start dealing cards, we volunteered to wash dishes. (They cooked the entire meal, after all!)
As I wrapped up leftovers, I glanced down at the last few slices of cornbread in my hands and smiled as the little voice in my heart whispered, “Dad asked you to make this not only because he loves it… But because he’s really proud of you.”
I feel incredibly blessed that my parents, my brother, my grandparents, and nearly all of my extended family are so supportive of what I do for a living. When I first contemplated walking away from a career in organic chemistry to pursue blogging, my parents cheered me on every step of the way, which is a huge reason why Amy’s Healthy Baking is now my full-time job and full income source.
And another big reason? You!
Your interest in my recipes, whether you try a few of them or read every blog post, whether you share them on Facebook or save them to Pinterest, whether you tell your friends about my blog or buy my Healthier Chocolate Treats cookbook… All of those little things add up and have enabled me to work full-time on Amy’s Healthy Baking. I’m so grateful for what you’ve done for me!
