Our souls are like Swiss cheese. They contain holes of various sizes that can be filled with things unique to each of us, things that make us lose track of time and feel utterly alive and blissfully complete.
Some of my soul’s holes are the perfect shape and size for the gentle tug of batter on my wooden spoon, the elastic spring of dough under my palms, the freshly mown grass and perfectly raked dirt of a baseball diamond, the click of my camera’s shutter capturing one precious moment at a time, slowly tracing my finger down the page of a book, and watching the ocean’s waves gently wash up on shore to kiss the sand. Yet one of my most special Swiss cheese holes is filled by interactions with you.
Yes, YOU!
When you browse around my blog, sifting through different recipes to try… When you save those links on Pinterest and share them with your family and friends… When you leave me a comment here on my blog, telling me your excitement about how those recipes turned out… When you share the pictures of your homemade goodies with me on Facebook and Instagram…
Those little things fill my soul and make my heart glow—and they’ve enabled me to turn Amy’s Healthy Baking into my full-time job and income source! I’m incredibly grateful for what you’ve done for me.
So to say thank you, I’m putting the spotlight back on you today! Here are some of the recipes that you’ve tried and pictures that you’ve shared on Instagram. I truly appreciate each and every time you do that; it really means the world to me! ♥

Would you like to see your picture in my next Sunday Spotlight? Then share it with me on Instagram using #amyshealthybaking and tag @amyshealthybaking IN the photo itself. (That guarantees I’ll see your picture! ?) I can’t wait to see what recipes you make!
Dear Amy, I recently connected with you thru Pinterest. I have 2 little GRANDBABIES in Palm Beach Gardens and their parents are very organic healthy eaters. They want me to bring only healthy breads and muffins to my peeps. I am very happy to comply. I recently turned 65 so my baking style is in need of some help. Your recipes look and sound delish and healthy. My daughter-in-love’s birthday is this Friday so I will be baking her the lemon poppy seed cake for sure. She loves that combo. Thank you for all you do for us. God bless you and your family. In His unfailing love, Nancy Sue aka Nanny xoxooxoxooxo
Thank you so much for your kind comment Nancy Sue! That truly means a lot to me that you plan on making my recipe to celebrate such a special occasion this Friday. Happy birthday to your daughter-in-love! 🙂 I’d love to hear what you think of the cake and any other recipes that you try! I’m so honored that you’re considering my recipes when trying to adapt your baking to a healthier style. ♡
Awwww, swiss cheese soul holes! SO CUTE! One of my swiss-cheese soul holes is perfectly sized for good chats with my sweet friend Amy! <3 Love you!
I definitely have that very same Swiss cheese hole, sweet pea!! Love you right back! ?
Thank you for including me twice in your Sunday Spotlight blog! Incredibly grateful that you share this gift with all of us. I will now never be without whole wheat flour and Greek natural yoghurt in my kitchen!
You’re welcome Wyn! And thank YOU for trying so many of my recipes. My heart glows every time I see one of your pictures in my Instagram notifications! ♡ That means so much to me that you’ve started stocking your kitchen with whole wheat flour and Greek yogurt because of my recipes. That’s such a huge compliment!!
