When Grandpa’s memorial celebration ended yesterday morning, my family and I returned to the house with Grandma. After filling plates with leftovers from dinner the night before, we headed out to the back patio for a light lunch.
We lounged in their comfy chairs and porch swing, gently rocking back and forth while telling stories and listening to the light spring breeze flutter through the palm trees. It felt relaxing and peaceful, especially in stark contrast to the previous two weeks in the hospital and dealing with the aftermath, and we all appreciated the quiet quality time.
I’m truly grateful for that opportunity, to take long stretches off from work without worrying about checking in with my boss first… Because I am my own boss. Amy’s Healthy Baking is my full-time job and income source, and you’ve helped make that possible.

My dear Amy I am so sorry to hear about your Grandpa, I had no idea as I missed the last couple of Sunday Spotlights. But how strange is that, that I made the overnight oats without knowing about your Grandpa and now I am reading this. It sounds like his last few days were as comfortable as you all could make it. Even though I never met your dear Grandpa I shall remember him every time I made overnight oats. Sending you and your family much love and lots of hugs xoxo
