Throughout my childhood, and occasionally even now in the present, Mom loved to celebrate special events with scoops of ice cream or an ice cream cake (perhaps because she grew up in the hot Arizona desert!). Straight A semesters, Honor Roll, birthdays, graduations, anniversaries, Mother’s Day—you name it!
We often grabbed pint of our favorite flavors from the grocery store, other times we picked out a cookies ’n cream cake with lots of chocolate from the freezer display case, and sometimes we enjoyed chocolate-dipped cones from Dairy Queen or big scoops in waffle cones, like from Baskin-Robbins or Lappert’s (our all-time favorite ice cream parlor!).
And now, thanks to the opportunities that have arisen from Amy’s Healthy Baking becoming my full-time job and income source, we’ll be eating a lot more ice cream in the upcoming months to celebrate a few really big and special occasions. {More details coming soon!}
